课程简介
食品细胞工程是从细胞的显微、亚显微和分子三个水平对细胞的各种生命活动开展研究,并将相关理论和技术应用在食品组分的活性评价、食品有害成分的毒性评价、食物成分吸收代谢分析以及食品加工生产的学科,具有多学科交叉融合等特点。要求学生学习和掌握细胞工程的理论知识及其在食品领域中的应用、食品细胞工程实验的基本流程等。本课程授课对象为食品科学与工程、环境科学、动物科学、农学、生物学、医学等专业的本科生和低年级研究生,授课形式为双语教学。
